So for the longest time I've been wanting to open up a cupcake bakery. However, the only experience that I've had with cupcakes is straight from the box. My sister's friend Staci made these delicious Lemon Meringue Cupcakes last week and I couldn't get them out of my head. Weird... I know. (But it makes sense to those of you that know me). So last night around 10:30 I told Matt that I was going to bake some cupcakes. He looked at me and said, "Go for it!". So I took Staci's recipe and combined it with another recipe I found... and whala (is that how it's spelled?)... Mini Lemon Meringue Cupcakes! They were soooo good! I took them to work with me and my boss loved them. She loved them so much that she's going to pay me to make them for her son's farewell this Sunday!
I'm weird and I took a picture of them... Here they are!
